Sugar kelp cola
Brighten up your next mulled wine gathering by offering delicious butter toffee with salt sugar kelp – it’s sure to be a hit and a mingling snack. You need:
150 g butter
2 dl whipped cream
3 dl sugar
1 dl light syrup
3 tbsp dried sugar kelp (flakes)
2 tbsp dried sugar kelp (powder)
Pinch of flake salt
Here’s what you do:
Melt the butter in a saucepan, preferably heavy-bottomed. Add the whipping cream, sugar and syrup. Bring to the boil at about 122 degrees. Remove the pan from the heat and add the sugar kelp flakes and flaked salt, pour into a dish, about 20×30 with baking paper and dust with seaweed powder. Let cool in the refrigerator and then cut into rectangles.
Tips! Powder the bottoms of the cones with seaweed powder as well, so they won’t stick to each other as much.
